Pasta with Pancetta and Leeks

Oh man, do I love leeks.  I have a serious case of love for these awesome little guys.  They do need a good bath, but are they ever worth it.
Give this recipe from the Pioneer woman, a try.  
You will not be sorry.  


The chopped leeks are added to the pancetta which has also been chopped.  I followed the tip to add a pat of butter.  
I just can't not add the butter.  Butter just makes it better. 
Butter, butter, butter.....butter.  There.  I'm over it.  I think. 
What you've seen is also mixed with a little white wine, Parmesan shavings, salt and pepper, and some creme. Oh, and the pasta.

For something so very tasty, this gets put together very quickly and easily.

AND I love to watch people chop things! I am just mesmerized by that! This also looks awesome, however, my husband is a picky eater and does not like onions! ANY thing that resembles an onion! Can you believe that!!!
