My lunch today

Le leftovers from last nights dinner of Quesadilla Casserole from Rachel Ray Magazine.



Excellent, Smithers...excellent.






I served it with the green enchilada sauce called for and added chopped, fresh tomatoes and avocado slices.  Soooo yummy and stored really well. 
I will definitely be making this again and soon.

Rachel Ray, is it true that it only takes 1/2 hour to prepare her dishes! It does look yummy!
